Toasted Edamame Crunch
Six grams of protein in a quarter cup of something you scatter, which is more than most crunchy toppings manage in a whole serving. Goes on rice bowls, salads and soup.
Per serving (4 tbsp)
Ingredients
- 14 ozfrozen shelled edamame
- 1 tbsptoasted sesame oil
- 2 tspsoy sauce
- 0.71 ozsesame seeds
- 1 tspchili flakes
Steps
- 1
Heat the oven to 200 C. Pat the thawed edamame completely dry. Any water left on them steams them soft.
- 2
Toss with the sesame oil and soy sauce and spread in a single layer on a tray.
- 3
Roast 25 to 30 minutes, shaking the tray twice, until the beans rattle and have split a little.
- 4
Add the sesame seeds and chili flakes for the last three minutes so the seeds toast without burning.
- 5
Cool completely before storing. They crisp as they cool and keep a week in a jar.
