Parmesan Seed Crumble
No ratings yet
The savory one. Scatter it over soup, a salad or roasted vegetables and it does what croutons do, with protein instead of bread.

Ingredients
- 4 ozparmesan, grated
- 2 ozsunflower seeds
- 0.71 ozsesame seeds
- 1 tspdried oregano
- to tasteblack pepper
Steps
- 1
Heat the oven to 180 C. Toss the parmesan, sunflower seeds, sesame seeds and oregano together on a lined tray.
- 2
Spread it thin. A thick layer steams instead of crisping.
- 3
Bake 10 to 12 minutes, until the cheese has set into a lacy sheet and smells nutty. Watch it from minute eight: parmesan goes from golden to bitter quickly.
- 4
Cool completely on the tray, then crush it coarsely with your hands.
- 5
Keeps a week in a jar at room temperature. The fridge softens it.
