Baked Cod with Lemon Cottage Cheese Sauce

No ratings yet

Cod baked simply and finished with a lemony cottage cheese sauce that stands in for a butter or cream sauce without going bland. Asparagus roasts alongside on the same tray.

Blending the cottage cheese into a sauce instead of serving it plain is the move. You get the protein without the curds.

Place the cod fillets and asparagus on a baking tray, drizzle with olive oil, and season with salt and pepper.

  3. 3

Bake for 12 to 15 minutes until the cod flakes easily with a fork.

  4. 4

While the fish bakes, blend the cottage cheese with lemon juice, zest, dill and garlic until smooth.

  5. 5

Spoon the sauce over the baked cod and serve with the asparagus.

  6. 6

Air fryer option: air fry the cod and asparagus at 190C (375F) for 8 to 10 minutes, until the cod flakes easily. No need to preheat the oven.

Try it this way

Swap the dill for basil and lemon for a more Mediterranean take, or use salmon instead of cod.
