Ingredients

salmoncottage cheese
  • 11 ozsalmon fillets
  • 14 ozcauliflower
  • 5 ozcottage cheese
  • 1 clovegarlic, minced
  • 7 ozasparagus
  • 1 tbspolive oil
  • 1lemon

Steps

  1. 1

Steam or boil the cauliflower until very tender, about 10 minutes.

  2. 2

Preheat the oven to 200C (400F). Season the salmon and asparagus, drizzle with olive oil, and roast for 12 to 15 minutes.

  3. 3

Blend the cooked cauliflower with the cottage cheese and garlic until smooth, adding a splash of water if needed.

  4. 4

Divide the cauliflower mash between plates and top with the roasted salmon and asparagus.

  5. 5

Finish with a squeeze of lemon.

  6. 6

Air fryer option: air fry the salmon and asparagus at 190C (375F) for 8 to 10 minutes, until the salmon flakes easily, while the cauliflower steams on the stovetop as usual.

Try it this way

Swap the cauliflower for sweet potato for a different mash base.
