Cottage Cheese Alfredo Pasta
Blended cottage cheese and a little parmesan make a sauce that clings to pasta just like a cream alfredo, minus most of the cream. Toss with grilled chicken and cracked pepper for something that tastes like a restaurant plate.
Cottage cheese sauce can split if it gets too hot too fast. Keeping the heat low and stirring is all it takes to keep it silky.
Per serving (1 bowl)
Ingredients
- 11 ozwhole wheat pasta, dry
- 11 ozcottage cheese
- 1 ozparmesan, grated

- 3
Warm the blended sauce in the empty pasta pot over low heat, stirring, until just heated through (don't let it boil hard or it can split).

- 5
Fold in the sliced chicken, season with black pepper, and serve immediately.
