Marry Me Chicken Meal Prep Bowls with Greek Yogurt Sauce
The sun-dried tomato cream sauce from the viral dish, made with Greek yogurt and a little Parmesan instead of a cup of cream. Stir the yogurt in off the heat and it stays smooth, even when reheated.
Per serving (1 bowl)
Ingredients
- 1 1/2 lbchicken breast, halved horizontally
- 1 tbspolive oil
- 1 tspsmoked paprika
- 1 tspdried oregano
- 4 clovesgarlic
- 2 ozsun-dried tomatoes, drained and chopped
- 10 tbspchicken stock
- 5 ozgreek yogurt
- 1 ozparmesan, finely grated
- 1.3 lbcooked basmati rice
Steps
- 1
Season the chicken with the paprika, oregano, salt and pepper. Heat the oil in a large pan and sear the chicken for 4 to 5 minutes per side, until golden and cooked through. Move it to a plate.
- 2
In the same pan, cook the garlic and sun-dried tomatoes for 1 minute. Add the stock and simmer for 3 minutes, scraping up the browned bits.
- 3
Take the pan off the heat. Whisk in the yogurt and Parmesan until smooth. Don't boil it after this point, or the yogurt splits.
- 4
Slice the chicken, return it to the sauce and turn to coat.
- 5
Divide the rice and chicken between four containers and spoon the sauce over. Keeps 4 days in the fridge. Reheat gently.
