Egg-Dipped Rice Paper Flatbreads with Chicken and Whipped Cottage Cheese

No ratings yet

Dipped in seasoned egg and pan-fried, rice paper comes out soft and foldable instead of crisp, the opposite of what it does in every other recipe here. Ten flatbreads from two eggs, filled with grilled chicken and whipped cottage cheese.

Ingredients

chickencottage cheese
  • 10 sheetsrice paper wrappers
  • 2 largeeggs
  • 3 1/2 tbspskim milk
  • 1/2 tbspolive oil, for the pan
  • 1/2 tspsalt
  • 1.1 lbgrilled chicken breast, sliced
  • 9 ozcottage cheese
  • 1 tspgarlic powder
  • 2 tsplemon juice
  • 2 tbspchives, chopped
  • 2 mediumtomato, sliced
  • 1 ozarugula

Steps

  1. 1

Whisk the eggs, milk and salt together in a wide shallow dish, one a little bigger than a sheet of rice paper.

  2. 2

Dip a sheet of rice paper into the egg mixture and leave it there for about 30 seconds, until it softens and carries a coating.

  3. 3

Heat a nonstick pan over high heat with a little of the oil. Lift the sheet out, let the excess drip off, and fry for about 45 seconds a side until it sets and goes golden in patches.

  4. 4

Stack each finished flatbread under a clean kitchen towel as you go. The trapped steam is what keeps them soft and foldable instead of letting them dry out and crack.

  5. 5

Blend the cottage cheese with the garlic powder, lemon juice and a pinch of salt until completely smooth, an immersion blender is easiest, then stir through the chives.

  6. 6

Spread the whipped cottage cheese over each flatbread, top with tomato, arugula and sliced chicken, and fold. Two flatbreads per serving.
