Blueberry Protein Oat Bread

No ratings yet

The same four-egg, oat, and Greek yogurt base, but with blueberry protein powder folded in and thawed blueberries added to taste for pockets of fruit through every slice. Drain the blueberries well first or the batter turns purple and gets loose before it even hits the oven.

Greek yogurt does the heavy lifting here. It keeps the crumb dense and moist instead of the dry, crumbly texture most protein breads end up with.

Ingredients

  • 4 mediumeggs
  • 5 ozrolled oats4 dl
  • 14 ozplain greek yogurt4 dl
  • 1 ozblueberry protein powder1 scoop
  • 1 tspbaking powder
  • 1 tspsalt
  • 100-150g, to tasteblueberries, thawed and well drained

Steps

  1. 1

Preheat oven to 200°C (400°F). Line a loaf pan with parchment paper.

  2. 2

Whisk the eggs in a large bowl until smooth.

  3. 3

Stir in the Greek yogurt until fully combined.

  4. 4

Fold in the rolled oats, blueberry protein powder, baking powder, and salt until you have an even batter.

  5. 5

Gently fold in the drained blueberries, just enough to distribute them without overmixing.

  6. 6

Pour the batter into the prepared loaf pan and smooth the top.

  7. 7

Bake 25-35 minutes, until a skewer inserted in the center (avoiding a blueberry) comes out clean and the top is golden.

  8. 8

Let cool completely in the pan before turning out and slicing into 2cm-thick slices.

Try it this way

Blueberry flavored protein powder can be hard to find. Vanilla or unflavored protein powder plus a bit more fresh or frozen blueberries works just as well.
