  • 1.1 lbcanned cannellini beans, drained and rinsed2 cans
  • 11 ozcherry tomatoes, quartered
  • 1cucumber, finely diced
  • 1 smallred onion, finely chopped
  • 4 ozfeta, crumbled
  • 2 tbspcapers, drained

  • 0.35 ozfresh dill, chopped
  • 3 tbspolive oil
  • 1, zest and juicelemon
  • 1 tbspdijon mustard
  • to tasteblack pepper

Steps

  1. 1

Whisk the olive oil, lemon zest and juice, dijon, a pinch of salt and plenty of black pepper in the bottom of a large bowl.

  2. 2

Add the drained beans, tomatoes, cucumber, red onion and capers and fold them through the dressing so the beans soak it up.

  3. 3

Flake in the tuna and fold once or twice only, so it stays in chunks rather than turning to paste. Fold in the parsley, dill and feta.

  4. 4

Divide among 4 jars or containers, pressing down lightly so the dressing works its way to the bottom.

  5. 5

Keeps in the fridge for 4 days and gets better after a day. Eat cold, straight from the jar with a spoon, or pile it onto toast.
