Date-Sweetened Chocolate Chia Mousse
Dates do all the sweetening and chia does all the setting, so there is no sugar, no gelatin and no protein powder anywhere in it. Blend it in the morning and by evening the spoon stands up on its own.
Per serving (1 cup)
Ingredients
- 3Medjool dates, pitted
- 11 ozplain Greek yogurt, 0%
- 5 1/2 tbspmilk
- 3 tbspunsweetened cocoa powder
- 2 tbspchia seeds
- 1 tspvanilla extract
- 4 tbspplain Greek yogurt, for serving
- 1strawberry, halved
Steps
- 1
If the dates feel firm, cover them with hot water for 5 minutes, then drain.
- 2
Blend the dates with the Greek yogurt, milk, cocoa powder, chia seeds and vanilla until completely smooth. Scrape the sides down once so no date skin survives.
- 3
Divide between two small cups or ramekins and chill for at least 4 hours, ideally overnight. The chia swells and sets the mousse on its own.
- 4
Top each cup with 2 tbsp Greek yogurt, half a strawberry and a dusting of cocoa.
Try it this way
Hold the chia seeds back and stir them in after blending if you want texture instead of a smooth mousse.
