The Protein Drop #4: Twenty minutes of beef that carries four days
Gochujang beef is the fastest thing in this series and the one that improves most overnight. The cucumber salad is what keeps it from getting boring.

Some prep dishes tolerate the fridge. A few actually want it. Ground beef in a gochujang sauce is the second kind, and it is ready in twenty minutes, which makes it the one we reach for when Sunday got away from us.
Fermented paste does the aging for you
Gochujang is already a fermented ingredient, deep and savory before it touches a pan. Cook it into browned beef with garlic, ginger, soy and a little honey, and the sauce keeps developing in the fridge the way a chili or a ragu does. Monday's box is good. Wednesday's is better.
Brown the beef hard first and drain the fat before the sauce goes in. Sauce added to a wet pan steams the meat instead of glazing it, and you lose the crispy bits that make the whole thing worth eating.
The gochujang beef bowls are 42g of protein at 580 calories.
The prep note: build in one sharp thing
Four days of the same rich, sweet, savory bowl gets dull by Thursday. Not bad, just dull, and dull is what makes people order something else.
The fix is a sharp component that lives in its own tub. Here it is a cucumber salad: sliced thin, salted for ten minutes, squeezed dry, then tossed with rice vinegar and chili flakes. Salting first is not optional. Cucumber is mostly water, and skipping that step gives you a puddle by Tuesday.
Add kimchi next to it and you have two acidic, crunchy things to wake the bowl up. That contrast is the entire reason this box still tastes good on day four, and it is the habit worth taking from this issue into whatever you cook next.
Add it to your week
Every card at the bottom of this issue carries a calendar button. Tap it and the dish lands in your week, which pools everything you have added into one shopping list. Add all three from this issue and the list writes itself.
Something new to cook this week
This issue's new thing is a dessert, because a week with nothing sweet in it does not last. Greek yogurt chocolate protein mousse is 135 calories and takes five minutes.
A snack to keep the protein coming
For the afternoon, a vanilla protein mug cake is 28g of protein in ninety seconds, which beats whatever is in the office kitchen.
Cook one thing well on Sunday, cook one thing fresh midweek, and keep something in the fridge for the gap. Back next Saturday.

There are three ways a protein dessert goes wrong and each one has a fix. Once you can name the failure you stop making it.
The Protein Drop #8: Keep the sauce out of the box
A peanut sauce poured over on Sunday has been absorbed by Tuesday. In a tub of its own it is still a sauce on Thursday, and a teaspoon of hot water brings it back.
The Protein Drop #7: A lunch that never goes near a microwave
Most prep boxes get worse every day. A jar of tuna, white beans and lemon dressing gets better, and it is ready the second you open it.
The Protein Drop #6: Most of the glaze goes on after the oven
Teriyaki that goes into the oven caramelizes away by Wednesday. Brush on a third, keep the rest cold, and spoon it over the salmon in the box.
