The Protein Drop #5

The Protein Drop #5: One pan, two proteins, four boxes that reheat

Shrimp is the protein everyone avoids in meal prep because it turns rubbery. Cook it for the last three minutes and it survives the fridge and the microwave.

The Protein Drop #5: One pan, two proteins, four boxes that reheat

Ask around and most people say shrimp does not belong in a meal prep box. They are right about the usual method and wrong about the food. Shrimp turns rubbery because it gets cooked twice, once in the pan and again in the microwave on Wednesday. Take away the first cook and the problem mostly goes with it.

Shrimp goes in last

Brown the turkey sausage hard first. It is the seasoning for the whole pan, and the fat it leaves behind is what the onion, peppers and celery cook in. Stir in the rice and the stock, let it cook covered until the rice is tender, and only then do the shrimp go on top, covered again, for three minutes and not one more.

They steam just to pink on top of the hot rice and stay there, which is the only state a shrimp can be reheated from. Fold everything together off the heat, put a lemon wedge in each box, and squeeze it over the top after reheating. The shrimp stay tender, and the box keeps three days in the fridge.

The cajun shrimp and turkey sausage rice is 43g of protein at 515 calories a box, from one pan.

The prep note: two proteins beat one

A box built on a single protein gets flat by day three. Sausage brings smoke and salt, shrimp brings something sweet and clean, and together they taste like more than either does alone. Half a kilo of shrimp and 300g of sausage cover all four boxes, so it is one shop, not two.

The habit to take from this issue is to split the protein across two ingredients with different flavors whenever a prep dish is one long, even taste. It costs nothing, and it is the reason the last box still reads as a meal.

Add it to your week

Every card at the bottom of this issue carries a calendar button. Tap it and the dish lands in your week, which pools everything you have added into one shopping list. Add all three from this issue and the list writes itself.

Something new to cook this week

A salad is what a prep box cannot be, so this issue's fresh dish is one. Thai steak salad with herbs and lime is 50g of protein and 405 calories a serving, and it is done in twenty minutes. Slice the steak thin, toss it warm, and eat it the same night. Fish sauce carries the salt, so taste the dressing before you add any more.

A snack to keep the protein coming

For the afternoon, dark chocolate peanut butter stuffed dates are chewy, salty and sweet, with 9g of protein a serving. They will not replace a meal, but they are a lot more filling than the candy bar they stand in for.

New in the bank this week

Recipes go live on a schedule, a few every week, so the bank is not the same on Saturday as it was on Monday. Everything published in the last seven days is collected on the new recipes page, meals and drinks together, with the newest first. This week that includes a protein hot chocolate that carries 32g of protein and reads as plain hot chocolate.

Cook one thing well on Sunday, cook one thing fresh midweek, and keep something in the fridge for the gap. Back next Saturday.
