Cottage Cheese Egg White Wraps
Blended into a thin batter and cooked like a crepe, this is the whole flour tortilla replaced with two ingredients you probably already have. Use it for breakfast burritos, lunch wraps, or torn up as dippers.
Blending it smooth and cooking it like a crepe is what turns cottage cheese into something you can actually roll. No rubbery texture, no curds.
Per serving (1 wrap)

- 7 ozcottage cheese
- 7 ozegg whitesabout 6 large
- 1/4 tspsalt
- 1/4 tspgarlic powderoptional
Steps

Blend the cottage cheese, egg whites, salt, and garlic powder together until completely smooth and no lumps remain.
- 2
Heat a nonstick pan over medium-low heat and lightly grease it.
- 3
Pour about 1/3 cup of batter into the pan and swirl to spread it thin, like a crepe.
- 4
Cook for 2-3 minutes until the edges lift and the surface is set, then flip and cook 1 more minute.

Stack the wraps between sheets of parchment as you go so they don't stick together.
