Cheddar Chive Cottage Cheese Egg Muffins

No ratings yet

Blending cottage cheese into the eggs before baking gives these muffins a custardy inside instead of the rubbery texture plain egg muffins can get. Sharp cheddar and fresh chives keep the flavor simple, so they reheat well without tasting like leftovers.

Ingredients

eggscottage cheese
  • 8 largeeggs
  • 7 ozcottage cheese
  • 3 ozshredded cheddar
  • 3 tbspchives, chopped
  • 1/2 tspsalt
  • 1/4 tspblack pepper

Steps

  1. 1

Preheat oven to 180°C (350°F) and grease a 12-cup muffin tin.

  2. 2

Blend the eggs and cottage cheese together until completely smooth.

  3. 3

Stir in half the cheddar, the chives, salt, and pepper.

  4. 4

Divide the mixture evenly among the muffin cups, filling each about three-quarters full, and top with the remaining cheddar.

  5. 5

Bake 18-22 minutes until puffed and set in the center.

  6. 6

Let cool 5 minutes before removing from the tin; they'll deflate slightly as they cool, which is normal.

  7. 7

Air fryer option: divide the mixture into silicone muffin cups and air fry at 160C (325F) for about 12 to 14 minutes, until puffed and set in the center.

Try it this way

Swap the cheddar and chives for feta and spinach for a different flavor on the same base.
